Professionals and more people prefer gas stoves.
Professional chefs do not like electric stoves for several reasons:
First, an electric stove has a gradual change in temperature. Gas flames give you instant temperature change between adjustments. This type of precision is desired by all chefs.
Second, the heat distribution from an electric stove is only at the surface of direct contact. Gas flames reach all around the pot, providing more evenly cooked foods.
Third, Electric stoves make the kitchen hotter. Gas stoves put less heat into the kitchen.

Steps to take with Gas Stoves for reducing energy bills:
1.) Always adjust the flame from the burner to meet your needs.
Don't have the maxium or the largest spread of the flame with small pots.
2.) Always keep the LID on when you are not stirring!
This will help hold the heat building up in the pot.
3.) Shut the burner off just prior to the food being done.
You will have to be the judge of this, but even if you can shut off the burner a few minutes before the food is completely done because the residual heat will finish cooking the food, then do so. This all adds up to big savings over a year.
